Thai Hot and Sour Noodle Salad and Great Canadian Give-Away Winner!

Here is a pretty easy-peasy recipe for a cold Thai noodle salad. It is open to creative variation and has the wonderful quality of being able to sit patiently and wait for you to create the rest of your dinner.
I happen to love rice vermicelli, hubby doesn't care for the texture as much as standard vermicelli noodles but this is just personal preference. I love the chewiness of the rice ones, but the Italian variety will do in a pinch.
The flavours are nicely balanced and intense, a great noodle salad.

Hot and Sour Noodle Salad
Thai Simple and Delicious Easy-to-Make Recipes

12 oz rice vermicelli
4 tbsp sesame oil
3 tbsp soy sauce
juice of 2 limes
1 tsp sugar
4 scallions, sliced finely
1-2 tsp hot chili sauce
2 tbsp chopped fresh cilantro

Prepare the vermicelli as directed on the packet. (Mine required a one hour soak and then boiling for 10-12 minutes) Drain, then place in a bowl and toss with half the sesame oil.
In a bowl, mix together the remaining oil, the soy sauce, lime juice, sugar, scallions and chili sauce. Stir into the noodles.
Stir in the cilantro and serve.

*I added thinly sliced carrot and celery and made a little extra dressing to accommodate them.

*I garnished with toasted sesame seeds and thinly sliced lime.
