Bacon-Wrapped Filets and Grilled Radicchio

This is a quick and easy dinner, with good wow-factor. Just prep your fish ahead of time, and the whole thing will take about 15 minutes to make. Which is perfect if you have spent your evening gathering awesome gifts for your 19 (or soon to be 19) year-old who had the nerve to be born 3.5 weeks before Christmas.
Somehow that always makes me feel like I have to try extra hard on the birthday presents.. you know, to make up for the ever-looming Santa thing. I'll let you know how he likes them. 

But back to the fish - what a great way to serve plain white fish! Everything is better with bacon, even fish. Who knew? The radicchio has its bitterness tamed by the grilling and is sweetened with the balsamic and orange juice. Lots of bold flavours going on here, you won't be sorry.
And I won't be sorry about the very cool gifts which I can't talk about here because you never know when one of my children might actually read what I write..

Bacon-Wrapped Pan-Roasted Fish Filets
adapted from Michael Symon's Live to Cook for Symon Sundays

8 3-oz skinless white fish filets (I used sole)
kosher salt and black pepper
Thyme, fresh or dried
2 Tbsp butter, softened
16 strips bacon
1 tbsp vegetable oil

Season the fish with the salt and pepper and thyme, rub in lightly.
Butter one side of each filet and sandwich together, butter-side to butter-side, tucking in any small bits.
Lay the bacon down overlapping a little, to wrap the fish.
(I tied mine up, too)
Put on a plate, seam side down. Cover with plastic wrap and refrigerate 1 hour.
Preheat oven to 425°F
Pour the oil in a oven-proof pan and heat to med-high. Add fish filets, seam side down and sauté on all sides until crispy. Place the pan in the oven to crisp the bacon and finish cooking. (2-4 minutes)
Drain and serve. Slice if desired. (And take string off if using.)

Grilled Radicchio with Orange and Balsamic
adapted from Michael Symon's Live to Cook for Symon Sundays

2 heads of radicchio, quartered through the core
1 Tbsp olive oil
Kosher salt and freshly ground pepper
1 Tbsp extra virgin olive oil
2 Tbsps balsamic vinegar
Grated zest and juice of 1 orange

Preheat grill. 
Drizzle radicchio with olive oil and season all over with the salt and pepper.
Grill on all sides, about 2 minutes per side.
Season to taste with the extra virgin olive oil, orange juice, balsamic vinegar and more salt and pepper. Serve.
