Fun in the Sun - Jamie's Simple Slaw

What's the best salad for BBQ season? Well, coleslaw has to be right up there as traditional favourite. I like to make it in the morning and let the flavours marry all day. Serve it beside your BBQ creations, or even pile it on a bun with some pulled pork. Just make lots, it keeps well for days in the fridge.

Jamie’s Favourite Coleslaw
Original recipe from ‘Cooking with Jamie’ by Jamie Oliver

½ a white cabbage finely sliced
1 small red onion, finely sliced (I used chives, I find onion can get too strong)
3 carrots, thinly sliced
2 red apples, cored and thinly sliced
1 small bunch flat-leaf parsley, finely chopped
A couple of dollops mayonnaise
1 heaped teaspoon English mustard
Sea salt and freshly ground black pepper

1. Combine all the ingredients in a salad bowl.
2. Have a taste and add seasoning as needed.
