Loneilteaches - pickled beets are pretty good - but roasted are so much better! Just stay away from canned and everything will be okay. :)

I love a good beet salad. Lately I've been in a rut with the same ingredients (swiss chard and apples or goat cheese and pecans). This is a refreshing change, it looks yummy!
Agreed - roasting is the only way to go for beets. I tried boiling them one time, eeww.
